Crisp whites and sparkling wine are the easiest partners for cheese, because their acidity, and the bubbles in Champagne, cleanse your palate between bites. On my wine pairing chart:
- Champagne: goes with aged Gouda, cheddar, Camembert, goat cheese, Parmesan, blue, Gruyère and Brie.
- Pinot Grigio: the most flexible white. It suits eleven cheeses on the chart, including Swiss, Havarti, feta, mozzarella, goat cheese and Brie.
- Sauvignon Blanc: goat cheese and Gruyère.
- Riesling: Swiss, Havarti, cheddar, aged Gouda and blue.
- Chardonnay (a richer white): Camembert, Parmesan, Gruyère, Manchego and provolone.
