What cheese goes with beer?

As with wine, match the strength of the beer to the strength of the cheese. Common pairings:

  • Pilsner and wheat beer: fresh cheeses like goat cheese, feta, ricotta and mozzarella. Lagers and pilsner also go with Swiss and Havarti.
  • Saison: Brie, Camembert and goat cheese.
  • IPA or pale ale: sharp or medium cheddar, where the hop bitterness cuts through the fat. A very old cheddar can be too tangy next to a hoppy beer.
  • Brown or amber ale: aged cheddar, aged Gouda and Parmesan.
  • Stout or porter: strong blue cheeses like Gorgonzola and Stilton.

These come from what brewers and cheese writers recommend, so treat them as a starting point.
