It depends on the cheese. As a general rule, the more moisture a cheese has, the shorter its life. Here's a rough guide for cheese stored in the fridge after you've opened it:
- Fresh cheeses (ricotta, cottage cheese, cream cheese, fresh mozzarella): about a week.
- Soft-ripened cheeses (Brie, Camembert): roughly 1 to 2 weeks once cut.
- Semi-soft and semi-firm cheeses (Gouda, Havarti, Monterey Jack, young cheddar): around 3 to 4 weeks.
- Hard, aged cheeses (Parmigiano Reggiano, aged Gouda, Manchego): a month or more if wrapped well. An unopened block can keep for months.
Treat those as ballparks, not promises. How the cheese is wrapped, how cold your fridge runs, and how often you open and handle it all matter. And the date on the package is usually about quality, not safety, so use your eyes and nose too.
