Bucheron Goat Cheese

Bûcheron is a French goat’s milk cheese, made as a log with a white bloomy rind, that’s chalky in the middle and creamy near the rind.

  • Milk: goat’s, pasteurized
  • Region: Loire Valley, France
  • Style: semi-soft, bloomy rind
  • Aged: about 5 to 10 weeks
  • Shape: a log, usually sold sliced into rounds

Texture and flavor

When it’s young, Bûcheron is dense and semi-firm with a chalky, crumbly center. As it ages, the area under the rind breaks down and gets soft, and it can turn almost gooey at room temperature. The flavor is mild when young and gets tangier with age, with notes of lemon and earth.

How to serve it

A Loire Valley white such as Sancerre or Pouilly-Fumé is a classic match, and something sweet like grapes goes well too. For more ideas, see What wine or whiskey goes with cheese?

Wrapping up

A good introduction to goat cheese if you like the tang but want something with a bit of creaminess.
