Goat Gouda is a Dutch semi-hard cheese made in the style of Gouda, but from goat’s milk.
- Milk: goat’s, usually pasteurized
- Origin: the Netherlands
- Style: semi-hard
- Aged: at least 25 days for the protected Dutch goat cheese (Hollandse geitenkaas), and longer for more flavor
How it tastes
Young goat Gouda is soft, mild and clean. With age it gets more intense, with caramel and nutty notes, while keeping a goat’s milk tang that sets it apart from regular cow’s milk Gouda.
How to serve it
If goat cheese isn’t your favorite, pairing it with something sweet, like a fruit preserve, helps balance the tang. It also sits nicely on a cheese board; see How do you build a cheese board?
