Brie is a soft, bloomy-rind cheese, which is exactly why it bakes so well: a few minutes in the oven and the inside goes soft and spoonable while the rind holds it together. These are eight baked Brie recipes from other cooks that are worth bookmarking, from a five-minute honey-and-walnut wedge to make-ahead bites for a crowd.

New to Brie? Start with how to eat Brie, and if you're not sure which wheel to buy, here's the difference between Brie and Camembert.

Whole wheels

The simplest way to do it: top a wheel or wedge, bake it briefly, and put it out with something to scoop with.

Baked Brie with Honey and Walnuts

From Mountain Mama Cooks at mountainmamacooks.com

The quickest one here. A wedge or small wheel warms at 350°F for 5 to 10 minutes while walnuts toast on the stove, then it gets the walnuts, honey, fresh rosemary and a pinch of flaky salt. Dried cranberries are optional. The author bakes it in a small cast-iron skillet and serves it in the same pan.

Baked Brie with Figs, Pistachios and Orange

From Erin McDowell at purewow.com

An 8-ounce wheel covered in fig jam, sliced fresh figs, pistachios and orange zest, baked at 375°F for 15 to 17 minutes. Honey and thyme go on after it comes out of the oven.

Honey Brûlée Brie

From Spoon Fork Bacon at spoonforkbacon.com

A brûlée twist: the top rind of a triple-cream wheel is cut off, the cut side is spread with honey and pressed into turbinado sugar, then the Brie bakes for a few minutes before the sugar is caramelized under the broiler (or with a kitchen torch) into a crackly crust. Under 15 minutes start to finish.

Best Baked Brie Dip Recipe with Garlic Butter

From Best Recipe Box at bestrecipebox.com

Closer to a dip: the top of the wheel is scored in a crosshatch, then garlic and melted butter are poured over with thyme and black pepper, and it bakes at 375°F for 10 to 15 minutes.

Wrapped in pastry

Baked Brie in Puff Pastry

From Lemon Blossoms at lemonblossoms.com

The classic en croûte: a whole wheel topped with a dried cranberry and cherry compote (simmered with orange zest and vanilla), wrapped in puff pastry, chilled for 15 minutes and baked at 400°F until golden. Good for planning ahead: the compote keeps for several days and the wrapped wheel can wait in the fridge for up to a day before baking.

Baked Brie and Prosciutto Rolls

From Half Baked Harvest at halfbakedharvest.com

Individual rolls instead of one wheel: a slice of Brie and a slice of prosciutto rolled up in buttered phyllo, baked at 350°F for 20 to 25 minutes, then finished with honey, black pepper, pomegranate seeds and flaky salt. Makes 12.

A few tips

  • Most of these leave the rind on; it softens in the oven and holds the cheese together. Read more about eating the rind.
  • Serve it straight away. Baked Brie firms up again as it cools.
  • Camembert works the same way. Here's my easy baked Camembert.
