It may be no surprise that the name “fresh cheese” comes from the fact that these cheese are not aged very long or at all. Fresh cheeses are usually a type of soft cheese that has a lot of moisture; and, because oftentimes fresh cheeses are cultured with acidic substances (lemon juice, vinegar, buttermilk, etc.) the taste can often be tangy or a bit sour. Also, important to note that fresh cheese is characteristically without rind.
